ROSCON DE REYES

On this Epiphany day, do you know the Spanish recipe for "Roscón de Reyes"?

In Spain, Epiphany kicks off on the eve of the feast, with large family meals and parades of the Three Wise Men through the streets. On the morning of the 6th, gifts are opened and it's customary to eat the "roscón de reyes". A bean is hidden in the brioche, and whoever finds it becomes King for the day, while whoever finds the bean will have to buy the Kings' crown the following year.

Roscon de Reyes

Follow the recipe and become king of the crown!

INGREDIENTS

  • Para prefermento :

130 gramos de harina (type 55)

10 gramos de levadura fresca de panadería

5 gramos de azúcar

50 gramos de leche a temperatura ambiente

  • Para la mesa del roscón

2 huevos

60 gramos de mantequilla a temperatura ambiente

La ralladura de medio limón

Le ralladura de media naranja

5 gramos de aceite esencial de azahar

40 gramos de leche a temperatura ambiente

10 gramos de zumo de naranja natural

90 gramos de azúcar glasé

430 gramos de harina (type 55)

2 gramos de sal

  • Para la decoración

1 huevo batido

Frutas confitadas

Almendras enteras o en rodajas

Azúcar perlada

INGREDIENTS

  • For pre-ferment :

130 grams flour (type 55)

10 grams baker's yeast

5 grams sugar

50 grams room-temperature milk

  • For the roscón dough

2 eggs

60 grams room-temperature butter

Zest of half a lemon

Zest of half an orange

5 grams orange blossom essence

40 grams room temperature milk

10 grams natural orange juice

90 grams powdered sugar

430 grams flour (type 55)

2 grams salt

  • For decoration

1 beaten egg

Candied fruit

Whole or slivered almonds

Pearl sugar

PASO A PASO :

1. Hacer el prefermento :

Mezclar la harina, el polvo de hornear, el azúcar y la leche en un bol y forme una bola con la masa. Una vez amasada, mantenga la masa en un récipiente hermético cubierto con paños húmedos.

Unas horas más tarde, la masa se duplicó en volumen.

2. Hacer a masa principal

Batir los huevos y añadir los demás ingredientes y terminar con la harina.

Añadir el prefermento.

Amasar y luego dejar descansar 2 horas.

Puede amasarlo y darle forma de corona. Hacer un gran agujero con los dedos para que la corona no se rompa.

Déjalo descansar por una hora en un lugar cálido.

Precalentar el horno a 170 grados.

 

3. Decorar

Esparcir el huevo batido en la corona

Decorar con frutas confitadas, almendras y azúcar perlada.

Colocar la corona en el horno (calor rotativo) durante 20 a 24 minutos.

¡Deja enfriar y disfrutar!

 

STEP BY STEP :

1. Pre-fermentation

Mix the flour, baking powder, sugar and milk in a bowl and shape the dough into a ball. Once kneaded, store the dough in an airtight container covered with damp cloths.

A few hours later, the dough has doubled in volume.

2. Make to main dough

Beat the eggs and add the other ingredients, finishing with the flour.

Add the pre-ferment.

Knead and leave to stand for 2 hours.

You can knead it and shape it into a crown. Make a large hole with your fingers to prevent the crown from breaking.

Leave to stand for an hour in a warm place.

Preheat oven to 170 degrees.

3. Decorate

Spread beaten egg on crown

Decorate with candied fruit, almonds and pearl sugar.

Place the wreath in the oven (convection heat) for 20 to 24 minutes.

Leave to cool and enjoy!
